As you may have gathered by now, we are big on vegetables: as meals, as sides, as snacks, and even as liquid treats served in fresh made juices and smoothies. Vegetables pack a powerful punch, there’s no two ways about it; they are full of vitamins and minerals, and contrary to popular belief they are a good source of calcium AND protein. What’s more, they are relatively inexpensive when compared to the price of meat, and even processed foods. And, as we will show you, they are easy to prepare and delicious to eat. With that in mind, this week is dedicated to broccoli, an easy to prepare, year-round vegetable, both healthy and delicious.
In our estimation, broccoli is a vegetable worth buying during every trip to the market. It is often referred to as the “nutrition powerhouse” as it is a rich source of antioxidants, vitamin C, fiber and folate. It is high in calcium (great for the bones), and has shown promise in protecting against various types of cancer due its phytonutrients. Broccoli is easily prepared. it can be steamed, stir-fried, roasted, or blanched. It’s a great addition to an omelet, delicious tossed on pasta, a fun snack when served steamed and cooled with a side of plain yogurt or hummus for dipping, and a quick and easy side if roasted at 450 for ten minutes. How ever you serve this vegetable, take care not to overcook it as it will destroy the nutritional value – and taste. Because it perishes quickly it is best to use it soon after you purchase it, and store it in plastic bags.
Our favorite way of eating broccoli is to steam it and dress it with some vinegar, salt, pepper and olive oil, while still warm. The broccoli will marinate in this simple vinaigrette, and serves as a delicious accompaniment to any dish. If you want to add heartiness to this dish, melt a tablespoon or two of butter on the steamed broccoli, and serve it with nutmeg and Parmesan cheese.
