Dinner Winner 2: Marinated Chicken, Avocado and Spinach Salad

Several years ago – when I was living in NYC, and eating out for most of my meals – Kathrin invited me to her apartment for dinner. The idea of a casual dinner being prepared midweek, at home, by someone with a demanding job on Wall Street was foreign to me. I’d spent my time on weekend dinner parties, but who had time to make a quick healthy meal after work? Was I wrong! The “Dinner Winner” dish Kathrin served – a vegetable salad, warmed and brought together by marinated and sautéed pieces of meat – was simple and delicious. It is that meal that marked the moment I began my adventure of cooking at home. I’d like to share it with you today in hopes that it will inspire you too. Come and cook with us!

The history of this dish is one of friendship. When I first suggested this blog, Kathrin told me she learned the dish from her friend Carmel, while visiting her in Japan.  She described her first experience of it like this: “We’d been lucky enough to spend several days eating the freshest Japanese fish when Carmel had us to her apartment for a dinner of spinach, tomatoes, avocado, chicken and a bit of pasta. And while the food in Japan was exceptional, this simple little meal is what I remember best. I’ve been making it ever since.” The dish earned it’s title as a “Dinner Winner” not only for it’s inspiration, and healthful balance of vegetables, protein and grains, but also because it is so easy you can have it prepped and on the table in less than 20 minutes.

To make this dinner winner you’ll need chicken, spinach, tomatoes, an avocado, some pasta or quinoa (if you have it on hand, though it’s just as good without), lemon, olive oil and marjoram (oregano, thyme, or sage work just as well). If you have time you can prepare the chicken in the morning, letting it marinade in the fridge for the day, though its just as fine to prep it before you cook it.  Make certain to invite your favorite friends over to share this meal; once I’d learned how to cook it from Kathrin I shared it with many of my friends (at home, midweek, cooked by me).  It’s a big hit!
