I know. You can buy Masala Chai (or, what is commonly known as “Chai” in the United States, though Chai is simply the Hindi word for tea) in just about any store. Tea bags are abundant, the liquid is easy to find, and I haven’t looked but the powdered stuff must be out there too. But there’s something cool about making your own Masala Chai on your stovetop. I had my first homemade Masala Chai twenty years ago when a friend’s mom prepared it for me one afternoon, and I was hooked. Give it a try and see what you think. Come and cook with us!
Ingredients
3 teaspoons of loose black tea
1 inch of ginger
1 to 2 cinnamon sticks
2 or 3 cloves
2 or 3 cardamom pods, cracked open with the side of a knife
2 cups of milk
2 cups of water
Honey to taste (start with ¼ cup for this amount of liquid)
Instructions
Bring water and milk to a boil, with spices and honey.
Simmer for 10 minutes.
Add loose tea and boil for an additional 5 minutes.
Strain and serve in warmed tea cups.
