French Crêpe

Serves 2 hungry kids, quickly!

Crêpe can be made as a savory lunch or snack, with melted cheese and shredded zucchini mixed into the dough.  It also tastes great with a thin layer of jam, lemon juice and sugar, or even chocolate spread such as Nutella.

Ingredients:

5 teaspoons unbleached white flour

1 egg

1 pinch of salt

½ cup milk

Canola oil

Tablespoon of jam (strawberry or raspberry work best)

1 tablespoon of lemon juice

Sprinkle of sugar

 

Instructions:

Mix flour, salt and milk and let soak for at least 15 minutes

Add egg and mix well

Heat a flat pan, adding a little oil on the bottom.

Add ¼ cup dough turning the pan so that the dough spreads out evenly in a very thin layer across the bottom.

Wait a little and turn to the other side.  Cook until golden brown.

Spread jam, lemon juice and sugar, or Nutella, or cheese and fold.
