Makes 1 large or 2 smaller pizzas
This recipe is so simple that I’m surprised I haven’t tried it before. I used white quinoa, but red or multi-colored quinoa probably looks smattering, too!
Ingredients
1 cup quinoa
1/2 tsp salt
1 tsp baking powder
1 Tbsp chopped fresh parsley
1 Tbsp dried oregano
Toppings such as 1 cup tomato sauce, 1 cup of shredded mozzarella and a handful of fresh basil.
Instructions
Soak quinoa in plenty of water for about 8 hours or overnight.
Preheat oven to 400 degrees F when ready to bake.
Drain quinoa, pour it along with 1/2 cup of water into a blender or tall container and, using a hand-mixer, mix it until smooth. This will take a few minutes as the grains tend to stick to the side so use a spatula to scrape down the sides and make a uniform dough.
Add parlsey, oregano and salt and mix until well blended.
Pour dough into a rimmed baking sheet lined with parchment paper.
Bake pizza crust oven for about 15-18 minutes until golden brown.
Remove from oven and carefully flip pizza crust over. Remove parchment paper.
Top with tomato sauce, shredded mozzarella and return to oven until cheese is bubbling.
Remove and serve warm.
