This recipe is from our dear friend Carmel Ireland who we have mentioned before as a source of inspiration for healthy cooking. Her meals are packed with nutritious and fresh vegetables and she often provides me with new and healthy options to regular dishes. This coleslaw is perfect as a side salad to meat dishes or on its own.
Ingredients:
¼ red cabbage, shredded
1 large carrot, grated
½ red onion, finely diced
1 red capsicum finely sliced
2 Tbsp shredded mint or parsley
Dressing
½ cup plain yoghurt
¼ cup mayonnaise
1 tspn Dijon mustard
Juice of 1/2 lemon
Salt and white pepper to taste
Instructions:
Toss together the coleslaw ingredients
Mix the dressing ingredients in a small bowl
Fold the dressing through the coleslaw
Add a little more fresh mint or parsley prior to serving
