F’Au Gratin is simple to make, impressive mid week, and a great way to get your vegetables in an easy one pot manner. I used my mandolin, because I have one easily accessible, but if your mandolin is at the top of your closet, or non-existent, a little patience with a knife will produce excellent results. Ingredients
1 medium onion
1 large starchy vegetable such as a sweet potato, a regular potato, or a butternut squash
1 medium sized water packed vegetable such as a tomato, a summer squash, or even some peppers
A few leaves of chopped, green leafy vegetables such as kale or spinach, fibrous stalks removed and discarded
A quarter cup of any type of hard cheese
Olive oil
1/8 cup of white wine (optional)
Salt and pepper to taste
Instructions
Preheat the oven to 450 degrees F.
With the mandolin, slice the first three vegetables thinly (I use an 1/8 inch slice).
Layer the vegetables in a baking dish, using a pattern of starchy veg, onion, water packed veg, then salt, pepper, a sprinkle of cheese and a few drizzles of olive oil. Layer all the vegetables tightly to the top.
If using white wine, pour over the vegetables, letting it settle in the nooks and crannies.
Cover with aluminum foil and bake for 20 to 30 minutes. Uncover and bake for an additional 15 minutes, or until the vegetables are soft and fully cooked.
